Rather than relying on a single dominant element, we build our ramen through the interaction of broth, tare, aroma oil, noodles, and toppings.
This philosophy guides every bowl we serve, whether it is paitan, chintan, or vegan.

The Five Elements of Ramen

Each element plays a role. Rather than letting one flavor dominate, we focus on harmony between all five.

Broth

Made from Top Farm chicken, kombu, shiitake, and aromatic vegetables, slowly prepared to build deep layers of natural umami.

Tare

Our house-made tare combines kombu, shiitake, koikuchi shoyu, and tamari shoyu to create the foundation of each bowl’s flavor and character.

Aroma Oil

Made from garlic, onion, leek, and ginger, our aroma oils add fragrance and depth while supporting the balance of the broth.

Noodles

Low-hydration No.22 straight noodles selected to support the clarity of the broth and the balance of the bowl.

Toppings

Sous-vide chashu marinated in house-made tare, free-range eggs, and fresh vegetables chosen to complement the broth.

Kotteri Style-Paitan

Tanrei Style-Chintan

Prepared overnight to develop a clear broth with layered flavor and natural umami. Clean, delicate, and deeply satisfying.

Plant-based without compromise. Kombu, shiitake, vegetables, and soy milk create a rich vegan broth full of natural umami.
