We do not use concentrated soup bases or premade seasonings diluted with water.
When flavor is built primarily through concentrates, it often leads toward a style of ramen that emphasizes salt, fat, or intensity.
We prefer to build satisfaction through balance, depth, and natural umami.
Our broths are prepared from carefully selected ingredients, including chicken, kombu, shiitake, and aromatic vegetables. Our vegan broth is developed from kombu, shiitake, vegetables, and soy milk using the same philosophy of balance and natural umami.
It takes more time and work, but we believe the result is a bowl that remains enjoyable from the first sip to the last.

The Five Elements of Ramen
Each element plays a role. Rather than letting one flavor dominate, we focus on harmony between all five.
Broth
Made from Top Farm chicken, kombu, shiitake, and aromatic vegetables, slowly prepared to build deep layers of natural umami.
Tare
Our house-made tare combines kombu, shiitake, koikuchi shoyu, and tamari shoyu to create the foundation of each bowl’s flavor and character.
Aroma Oil
Made from garlic, onion, leek, and ginger, our aroma oils add fragrance and depth while supporting the balance of the broth.
Noodles
Low-hydration No. 22 straight noodles from Kurata (Hiroshima), selected to complement our broth and maintain their texture until the last bite.
Toppings
Sous-vide chashu marinated in house-made tare, free-range eggs, and fresh vegetables chosen to complement the broth.
